Chipotle Zinfandel Burgers Serves 2 |

4 | slices | Cooked Bacon * | ||
2 | slices | Tomato (large) ** | ||
2 | fresh | Kaiser Rolls | ||
In a grill with a cover, prepare a medium-hot fire for direct-heat cooking. Place ground beef in a large bowl. Add everything but bacon, tomato and rolls; mix thoroughly. Shape mixture into round, flat patties slightly larger than rolls. Brush grill rack with vegetable/olive oil. Place patties on grill rack and cook about 4 minutes. Turn and continue cooking until cooked to desired doneness. When patties are cooked, remove from grill, stacking to keep warm. Place lightly buttered rolls, cut side down, on grill and toast lightly. (see also: Brioche Burger Bun) Assemble and serve immediately. * Precook bacon in a flat pan using a Bacon Press to keep the bacon flat, and more importantly, so it will cook evenly to a golden brown while remaining slightly limp. ** Try to find the largest tomatoes you can so that a single tomato slice will cover the entire burger, which will end up being about the same size as the Kaiser rolls. |
